Ranch Beef Skillet

1 lb ground beef
1-8 oz boc seasoned rice & black beans
1-14 oz can diced tomatoes with green chiles
1-10 oz box frozen corn kernels
1/2 cup cilantro
1 cup shredded sharp cheddar

Cook beef in a large skillet until done. Drain. Stir in rice & beans, tomatoes, corn and 2 1/2 cups of water. Cover & simmer 20 mins or until the water has been absorbed by the rice. Top with cheese and cilantro.

Great with avocado, too.

Serve with flour tortillas.

Works super well as a nacho topping.
